who we are



Roman and Adriana Wilcox are the owners and founders of One Grub Community (OGC) and the non-profit branch—Planty for the People. After years of working in the culinary industry, Roman saw a need to provide accessibility to healthy and quality meals to people in his community. In 2016, the Wilcoxes started OGC out of a food truck borrowed from a friend. After three months the truck broke down and they were forced to look for alternative ways to serve their community. This led them to set up as a tent vendor in the Downtown El Paso Art and Farmers Market where they started selling plant-based products that people could purchase to prepare at home and make into a complete meal such as their infamous seitan and Not’cho Queso. Soon after, One Grub Community was able to move into a permanent diner location.

Throughout all of this Roman and Adriana have kept their purpose of providing healthy meals for people regardless of their circumstance, or ability to pay. Their Pay-It-Forward (PIF) initiative, based on the national non-profit One World Everybody Eats, was the start for Planty for the People. The PIF model takes a percentage of the sales from OGC along with any tips and uses the funds to feed anyone in need of a meal. Through this model OGC has fed numerous shelters and community members throughout the central/downtown El Paso area.

The launch of their non-profit, Planty for the People, will expand the PIF vision in feeding and educating El Paso’s high-risk and food insecure communities. As our non-profit grows we will continues to host special Pay-It-Forward events across town to feed those in vulnerable and underserved communities.
